Xiaoyuan bamboo shoot jelly is one of the classic dishes in South Fujian. It originated in Jinjiang’s Anhai town. The bamboo shoot grows on coastal beaches and is cooled after being boiled by traditional methods. The food is rich in collagen and calcium. It goes well with soybean sauce, vinegar and garlic.
